In short
- The MICHELIN Guide arrived in Istanbul in 2022. İzmir and Bodrum followed in the 2024 edition, and Cappadocia joined in the 2026 edition.
- The 2026 selection for Türkiye, announced in December 2025, includes 17 starred restaurants (2 with two stars, 15 with one), 39 Bib Gourmand addresses and 115 Selected restaurants.
- In Istanbul, starred dining clusters in Beyoğlu and Karaköy, around Nişantaşı and along the Bosphorus.
- Book three to six weeks ahead for the best-known tables, more for Friday and Saturday nights and for private rooms. Tell the restaurant about halal and alcohol-free needs when you book.
Istanbul is now one of the most interesting dining cities in the region, and the MICHELIN Guide has noticed. The first MICHELIN Istanbul selection appeared in October 2022. In its 2026 selection, Türkiye has seventeen starred restaurants. More than half are in Istanbul, the rest in İzmir, on the Bodrum peninsula and in Cappadocia. Getting a table at the best known takes planning.
Following a long-standing decision, we do not name individual restaurants in our guides. The list changes every year, and the right table depends on the evening you have in mind. This guide explains how the MICHELIN Guide in Türkiye works, where starred dining is found, and how to book it well.
When did the MICHELIN Guide come to Istanbul?
The MICHELIN Guide published its first Istanbul selection in October 2022. It was the first time the guide had covered Türkiye. The story since then, edition by edition:
| Edition | Announced | Coverage |
|---|---|---|
| 2023 | October 2022 | Istanbul |
| 2024 | November 2023 | Istanbul, İzmir and Bodrum |
| 2025 | December 2024 | Istanbul, İzmir and Muğla, which includes Bodrum |
| 2026 | 4 December 2025 | Istanbul, İzmir, Muğla and Cappadocia |
Each year's selection replaces the last. Restaurants can gain or lose stars, enter or leave the guide, so a list from two years ago is already out of date.
The MICHELIN Guide Türkiye 2026 in numbers
The 2026 selection, announced on 4 December 2025, covers more than 25 styles of cooking across four regions. According to the MICHELIN Guide's own announcement:
- 17 restaurants hold MICHELIN Stars: 2 with two stars and 15 with one. Three restaurants earned their first star this year, in Istanbul, Muğla and Cappadocia.
- One of the two two-star restaurants is in İzmir's Urla wine region, promoted from one star this year.
- 39 restaurants hold a Bib Gourmand, sixteen of them new this year.
- 4 restaurants received a Green Star for sustainable gastronomy.
- 115 restaurants are Selected, the guide's recommendation without a distinction.
- 54 restaurants are new to the selection, 18 of them in Cappadocia, its first year in the guide.
Stars, Bib Gourmand, Green Star: what do they mean?
The MICHELIN Guide's inspectors visit anonymously and pay their own bills. They judge the food on the plate, not the room or the service, though both usually follow. The distinctions:
- Three stars: exceptional cooking. There is no three-star restaurant in Türkiye yet.
- Two stars: excellent cooking.
- One star: high-quality cooking.
- Bib Gourmand: good cooking at a moderate price. Often the best way to taste Turkish regional food at its most honest.
- Green Star: a restaurant leading on sustainable practice, from sourcing to waste. It is awarded alongside other distinctions, not instead of them.
- Selected: recommended by the inspectors, without a distinction.
Where are the starred restaurants in Istanbul?
Starred dining in Istanbul is not spread evenly. Most of it gathers in a few areas on the European side:
- Beyoğlu, Galata and Karaköy: the old Pera district and the waterfront below it, with chef-led kitchens in historic buildings and modern rooms.
- Nişantaşı and Şişli: elegant dining rooms close to the city's shopping streets.
- The Bosphorus shore: from Beşiktaş up towards Bebek and beyond, where a table by the water is part of the meal.
- The Historic Peninsula: a smaller number of addresses near the old city's monuments.
Outside Istanbul, the starred kitchens are in İzmir and Urla, among the vineyards of the Aegean, on the Bodrum peninsula, many of them open only in season, and in Cappadocia, among the valleys of Ürgüp and Uçhisar.

What does a starred dinner in Istanbul feel like?
Most starred restaurants in Istanbul serve a tasting menu of many small courses, sometimes with an à la carte option at lunch. Expect two and a half to three and a half hours for dinner. The cooking often starts from Türkiye's own pantry: Aegean olive oil, Black Sea anchovies and corn, Anatolian grains and herbs, Ottoman palace recipes reworked for today.
Many restaurants offer wine pairings built on Turkish producers, and an increasing number offer alcohol-free pairings: fermented drinks, juices, teas and sherbets. Ask for this when you book, not on the night.
Halal and alcohol-free dining at starred restaurants
Many of our clients from the Gulf ask whether Istanbul's fine dining suits a halal diet. The short answer is: often, with preparation. Pork is rarely served in Türkiye and much of the meat is halal. But wine and spirits are common in sauces and desserts, and tasting menus change with the season. When we book, we ask the kitchen directly and confirm in writing what will be served. Our guide to Muslim-friendly travel in Türkiye covers dining, prayer and family travel in more detail.
How to book a MICHELIN-starred table in Istanbul
- Book early. Three to six weeks ahead is sensible for the best-known tables. Friday and Saturday nights, the summer season and holiday weeks need more time.
- Watch release dates. Some restaurants release their tables on a fixed day each month. Missing that day can mean waiting for a cancellation.
- Share dietary needs at booking. Halal, no alcohol in cooking, allergies, vegetarian guests and children all change what the kitchen prepares.
- Expect a deposit or card guarantee. Many tasting-menu restaurants ask for one, with a cancellation window.
- Arrange the car. Taxis are scarce at closing time, and parking in Beyoğlu and on the Bosphorus is difficult. A driver who waits makes the evening easier. See chauffeur by the hour.
A starred evening, planned
An example of how we put an evening together. A couple celebrating an anniversary, one of them not drinking alcohol, staying on the Bosphorus:
- Five weeks before: we propose three restaurants that suit the occasion. The couple chooses a chef's counter in Beyoğlu. We book on the release day and confirm an alcohol-free pairing with the restaurant in writing.
- The week before: the kitchen receives a note about one shellfish allergy. Flowers are ordered for the table.
- On the night: a car collects them at 19:30. The driver waits nearby through dinner.
- After dinner: instead of going straight back, a private boat waits at the nearest landing for an hour on the water under the lights of the bridges.
Private rooms, chef's tables and occasions
For a birthday, a proposal, a business dinner or a family with young children, a private room or chef's table is often better than the main room. Several of Istanbul's starred restaurants have one. A few will close for a private event. These book further ahead than ordinary tables, sometimes months for a weekend. For larger groups and celebrations, see Michelin Dining. For an evening that starts with dinner and ends on the water, see Bosphorus evenings.

Starred dining beyond Istanbul
Some of Türkiye's most interesting kitchens are a short flight from the city, and they pair well with a few days of travel:
- İzmir and Urla. The Urla peninsula west of İzmir is the Aegean's wine and olive country. Its starred and Bib Gourmand restaurants sit among vineyards and cook with what grows around them. Combine it with Ephesus and the coast: see Ephesus & the Aegean.
- The Bodrum peninsula. Seafood, herbs and Aegean vegetables, often served by the water. Many restaurants here open only from spring to autumn, so check the season before you plan around them.
- Cappadocia. New to the guide in 2026, with its first star and eighteen new entries. Anatolian grains, pottery-kiln cooking and local wines, after a morning in a balloon. See our guide to a private balloon flight in Cappadocia.
Beyond the stars: Turkish dining worth booking
The guide is a good starting point, not the whole map. Some of Istanbul's best meals are in places that are not chasing distinctions:
- The meyhane: an evening of cold and hot meze, grilled fish and conversation, often with live music. It is the most Istanbul way to spend a long dinner.
- The ocakbaşı: a kebab house where meat is grilled over charcoal in front of you.
- Fish by the Bosphorus: the catch of the season, simply grilled, at a table by the water. Autumn and winter are the best months for many local fish.
- Ottoman cooking: recipes from the palace kitchens, slow-cooked lamb with fruit, stuffed vegetables and sherbets.
- Breakfast: a Turkish breakfast of cheeses, olives, honey and clotted cream, eggs and fresh bread, best taken slowly on a weekend morning. Our Istanbul, to taste day begins with one.
A note on the MICHELIN Guide and Megis
Megis Concierge is independent of the MICHELIN Guide and of the restaurants it lists. The figures in this article come from the MICHELIN Guide's announcement of the 2026 Türkiye selection. MICHELIN and the MICHELIN Star are trademarks of their owner. We book tables, private rooms and cars for our clients, and we choose restaurants for the evening and the guests, not for the number of stars.
If dinner is one evening in a longer stay, our Istanbul itinerary for three to five days shows where a starred dinner fits best.
Checked by the Megis team on 4 November 2026. Opening hours, rules and seasons change; we confirm every detail again when we plan your trip.
